I am finding that most of these old hymns can be converted (well, they were originally written for "conversion") into waltzes or marches/bluegrass/hillbilly songs. There are programs such as BAND IN A BOX that will do this for you, but everything I have written was input into a small MIDI keyboard (M-Audio Keystation 49e) by me with no computer composing. The composition program I use (ENCORE) can assign different voices/sounds such as bass guitar or choir ahhs, but for some reason, that has not been working right. That means all you will hear will be piano unless I fix it at work with the same setup.
